My experince with regraining SS is that if I do a thorough
enough job scratching it with sandpaper then whatever
texture it originally had is gone.  To gain confidence
before doing this to my car, I practiced with a scrap
polished sheet of SS.  The finish I put on it looks like the
finish on the car.
