This is the same pipe that Jordan Rubin replaced on his car.
It appears that the primary reason for the metal pipe is to
have an easy-to-reach spot to connect the heater hose to the
engine without going under the intake manifold, but this is
only a convenience when installing engines.  I see no
problems with what Samuel wants to do.  Looks like a good
way to eliminate a potential leak.  New coolant hoses
usually need to be tightened up a bit after a few thousand
miles, and hiding them under the intake manifold makes them
damn near impossible to do anything with.
