It doesn't make any difference how the wires are connected to the 
switch. Test the switch. Both terminals should not have any connection 
to the case and should have continuity to each other at the preset 
temperature. (it should say on the case). Immerse in water and heat 
the water and watch the thermometer with a meter connected to the 
terminals. Near the prescribed temp the switch should show continuty.
