I'm not having any issues with discoloration.  I am having a problem with a $1,500 exhaust system on a car that is not driven daily and garage kept rusting up after 7 months.

High grades of stainless steel will not rust, they will discolor from heat. Surely any welder who welds stainless will use the proper rods for the welds is so this also will not rust. Almost if not all metals will discolor under high heat, maybe C-276 steel would do it, but you could also buy a car for what the exhaust system would cost.
