Could be:
1. A bad seal and the coolant is seeping into the engine. Check the
look/quality of your oil. Possible, but not likely.
2. A slow leak when hot. Rubber expands and softens when hot. You
won't detect a pinhole cracks/leak when cold and contracted. In the
past I have used an ultra-violet additive, and found leaks with the
help of a blacklight after bringing the car to running temp and
checking.
3. Are you bleeding the system after each refill? If not, you may be
overheating and loosing it daily. Do you smell any vaporized coolant?
