Derek,
If you need to "treat the symptom" while tracking down the cause,
you can try using Rain X Anti-Fog on the inside of the windows.
Make sure you try to dry out the inside of the car as much as
possible, since there is moisture inside the car, getting onto
the windows, whether it is from a roof/door leak or other source.
Keep a spare towel in the car so you don't need to use a sock.
