Andrew, it is possible that the radiator fans are not coming on with the
a/c
compressor like they should.  If this is the case then I suggest that you
don't continue to run the a/c because it may cause too much pressure to
build up in the system and cause a hose to blow or damage the compressor.
Early cars do not have a pop-off valve protecting the a/c system like mid
and later cars do.

There are plenty of places for intermittent open-circuits for the radiator
fans.  All it takes is a loose connector, dirty relay contact, etc to
cause
a problem.  Next time the gauge shows hot, just hop out and check if both
fans are running.  I had one of mine intermittently quit working.  It
would
occasionally run too hot (when the passenger side fan wasn't running).
Most
of the time the car would stay cool enough.  I ended up making several
laps
up & down interstate just to find the problem.  One trip the car would run
hot and on another trip the car would run cool.  This was my "controlled
environment" test.  On one of my many trips, the car got hot, I pulled
over
on the side of interstate and finally noticed that a fan wasn't coming on.

Do check all your ground points.  There are several.
