I don't know about anyone else, but back when I would
have bigger jobs done by "professionals", I had a hard
time finding a shop with a torque wrench!

Most of these guys are just part changers, and poor
ones at that.  They are spending your money so they
just keep throwing parts at the problem all while
damaging everything else they touch.

I have a long story about the time I paid a
professional shop to install a clutch in my 1989
Beretta.  The mechanic actually said to me "I don't
need a torque wrench, it is plenty tight!".
