I use Windex/Simple Green for the light stuff, laquer thinner for the
really heavy stuff (read the can and wear gloves). It's generally not
a particularly good idea to hose down a DMC engine, at least the top -
it tends to fill up the spark plug wells with water (then the car
won't run!). I don't really understand why, but the spark plug boots
seem to do a poor job of keeping water out but a great job of holding
it in! This also fills up the holes in the "valley of death". They
will eventually dry out with engine heat, but I prefer just to wipe
it down.
You can also try a spray-on engine degreaser but don't get carried
away. It should be fine under the engine, on the lower frame, oil
pan, etc.
Also be careful about filling up the asbestos shield under the
catalytic converter with water - if allowed to remain wet for an
extended period of time it will sort of dissolve into asbestos dust.
After you do anything involving water be sure to drive the car enough
afterwards to get it good and hot before you put it away.
