Even if the thermostat was stuck closed, which I doubt, the engine should not overheat as quickly as you described. The thermostat is not expensive so if you wish, you could replace it in order to eliminate it as a possible cause of your problem. One more suggestion: a cooling system pressure tester would be very helpful in nailing down the problem.
