Original valeo clutches are still available from Renault, including the really early 10 spline type and the stronger turbo clutches for both 2.5 and 3 litre engines. All fit the delorean.

Tom, Be careful. If the clutch facing is to thick ( on each side ) the
clutch won't release unless the flywheel is turned down to compensate for
the disk facing material thickness. I have a few new original Valeo disk I'm
holding on to for the future and the original facing material is 3.3mm + or
- on each side. .5mm or about ( 20thousands ) can make a difference in
releasing or not.
But to really see if the disk needs to be replaced is how much material is
above the rivets. That will vary with manufacturing and wear. 
Valeo didn't make the disk or pressure plate for the last several years
before they were discontinued and it was jobbed out to other factories due
to demand. ( I know of 2 )  That is why the price kept going up and
deliveries kept going way out. Bosch does the same thing on a lot of their
parts that were discontinued on our cars last year.. 
Being in distribution all my life I know the signs of when a part is going
away by the factories and that is why I started making my own clutches 3 to
4 years ago. Yes, I had a little bit of a learning curve but it has all
worked out.

If the striping is still there you are probably OK, if gone and hitting the
rivets you should change it. It's one of those "how soon do you want to drop
the trans again?" questions. 

But to actually answer your question, the installed thickness across both
facings is about 8mm. Each side is 3.5 mm and about .5 mm for the steel
disc.

If a new one is thicker you may have issues completely disengaging the
clutch unless you cut less of a step in the flywheel or the pressure plate
is designed to accomdate something thicker. It's a system.
