Have you tried disconnecting your oil pressure sender?  My oil needle
shot to the 12 o clock position and I found out it was because the
wire connecting to the sensor had broke off.

I would try disconnecting the wire from the sensor to see what
happens.  If it shoots up to the 12 position you may just have a
problem with the sensor.

The sensor is very cheap and easy to replace.
