You've checked most of the main things already, so that is good.  Here's a question I have that might help: If you jump the otterstat to make the fans run, does the coolant temp return to normal?
 
If YES:
 
What is your VIN?  Early non-retrofitted VINS have the otterstat facing upwards (wires pointing away from the ground).  Later this was changed (wires pointing to the pavement) to prevent an air bubble from being trapped in the otterstat tube causing an overheat condition.  If you have it the early way, call a vendor and change the configuration to the later style.  Also, it is not unheard of for an otterstat to be bad right out of the box.  Some batches are unreliable.  While I've only gone through 2 in 60K miles, my next one will be the adjustable version from Toby (www.delorean-parts.com).
 
If NO:
 
There is probably either air in the system, or some type of obstruction.  You mentioned that you bled all the air; does that include the radiator bleed hose?  You can feel the various hoses around the car as it warms up to find out where the coolant is flowing.  Start cold and work your way left of the water pump, up the driver's side to the radiator in front, and back down the passenger side of the car.  As the car warms up, things should get hot in that order.  We have also seen the radiator itself cause this kind of problem.  If the fins are damaged enough that they are not dissipating the heat, it will be too inefficient to cool the car.  In the same way, you could have a stop leak product from a previous owner clogging the passages.  Just feel around and you will find it, but be careful not to burn yourself!  If you find an area that's hot on one side, and cold on the other, you've found your problem.
