james,
Removing the paint from your stainless steel panels is extremely labor
intensive. After the paint is removed the panels will have to be
re-brushed.
Unless you are certain of the history of the car it may have body filler
under the panels.

This job should be done by an auto paint specialty dealer with experience
at painting stainless steel.
