[DML] Stainless steel care

I have a few places on the stainless steel that are shiny. 

I just acquired some gray Scotchbrite pads from DMCH.

What is the recommended procedure and what chemicals should be used?

Is a wire brush ever used to create the combed effect?  If so, how?
